Our favourite new recipes for the Cozze Pizza Oven

Summer might be coming to an end. If it ever really started. It’s chucking it down as a sit and type this. However, that won’t stop us from using our Cozze Pizza Ovens whenever we can.

We thought it would be nice to compile some of our favourite recipes. The team have been sharing some interesting recipes and toppings in the office over the last month or so and we've been experimenting.  

Of course, sometimes you can’t beat a classic, however, we like to try new things. Making the perfect pizza at home in your Cozze is easy to learn though. It just requires some attention to detail, fresh ingredients, and a little practice.

Lazy Susan’s go-to pizza dough recipe

Of course, a good topping is only good if it is placed on a good base, so here’s our simple step-by-step guide to help you make a delicious homemade pizza dough:

Ingredients for the Pizza Dough:

  • 1 ½ cups of warm water (around 110°F or 43°C)
  • 2 ¼ teaspoons of active dry yeast (1 packet)
  • 1 teaspoon of sugar
  • 3 ½ cups of Caputo “00” flour
  • 2 tablespoons of olive oil
  • 1 teaspoon of salt

For the Pizza Sauce:

  • 1 tin of Mutti finely chopped tomatoes
  • 2 cloves of minced garlic
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste

For the Pizza Dough:

  1. In a small bowl, combine warm water, yeast, and sugar. Let it sit for about 5-10 minutes until it becomes frothy.
  2. In a large mixing bowl, combine the flour and salt. Create a well in the centre.
  3. Pour the yeast mixture and olive oil into the well. Stir until a dough forms.
  4. Knead the dough on a floured surface for about 5-7 minutes until it's smooth and elastic.
  5. Place the dough in a lightly oiled bowl, cover it with a clean cloth or plastic wrap, and let it rise in a warm place for about 1-2 hours or until it has doubled in size.

For the Pizza Sauce:

  1. In a saucepan, heat a little olive oil over medium heat.
  2. Add the minced garlic and sauté for about 1-2 minutes until fragrant.
  3. Add the crushed tomatoes, dried oregano, dried basil, salt, and pepper. 
  4. Simmer the sauce for 15-20 minutes, stirring occasionally, until it thickens.
  5. Taste and adjust the seasonings as needed. Remove it from heat.

Assembling and cooking the pizza in your Cozze Oven: 

  1. Preheat your Cozze Pizza Oven to 400°C, which usually takes around 15/ 20 minutes and the infrared thermometer will tell you when it is ready.
  2. Place the pizza stone in the oven while preheating.
  3. Roll out the pizza dough on a floured surface to your desired thickness.
  4. Transfer the rolled-out dough to a pizza peel or an inverted baking sheet dusted with a little semolina flour to prevent it from sticking.
  5. Spread a thin layer of the pizza sauce over the dough with a ladle using the back to spread it out and leaving a border of around 1 cm around the edges for the crust.
  6. Sprinkle a generous amount of shredded mozzarella cheese evenly over the sauce.
  7. Add your desired toppings.
  8. Carefully slide the pizza onto the preheated pizza stone.
  9. Turn the heat down to medium so that the top of your pizza does not burn and after about 30 seconds, take the pizza out, rotate it by a quarter and gently push it back in again.
  10. Repeat until your pizza is crisp and the cheese has melted.
  11. Gently remove the pizza from the oven and place it on a cutting board.
  12. Leave your steaming hot pizza to cool slightly before cutting it and sharing it with your loved ones.
  13. Turn the pizza oven back up to the highest temperature and leave it a few minutes before baking your next pizza.

As we said in the intro we like to get creative with our toppings and the team has been experimenting with different combinations. I guess the rules were anything goes and many of us were inspired by some of our fave meals. So here’s a selection of some of our recent favourites for you to try in your Cozze Pizza Ovens:

Pumpkin and hummus pizza

This is a great autumn-inspired pizza so even though we’re technically at the tail end of summer, it is perfect for all the wet weather we’ve seen lately. It is both savoury and sweet, with the pumpkin adding a touch of sweetness, while the hummus provides a wonderful creamy and nutty flavour.

Breakfast pizza

You can’t beat a good brekkie so why not put the two together? This recipe from Bake Off alumni, Naidya is a fun and easy way to start or finish your day, and you can play around with the toppings to suit too. Eggs, bacon, sausage, cheese, hash browns, red or brown sauce, whatever you like on your breakfast plate can go on your breakfast pizza!

Chicken tikka masala pizza

What happens when you put two of the nation's favourite takeaway dishes together? Pizza perfection if you ask us. The chicken tikka masala sauce is creamy and flavourful, while the tandoori chicken is marinated in yoghurt and spices until it is rich and decadent. We have also popped this topping on a good quality store-bought naan bread and the results were exceptional!

Fennel sausage pizza

We were looking for an alternative to pepperoni and salami and Kitchen Confidence’s fennel sausage pizza ticked all the boxes. Take an Italian sausage made with fennel seeds, remove the casing and brown it off for the perfect flavourful and aromatic topping. It is a great alternative to traditional pork sausage, and it pairs really well with roasted peppers and onions.

Shrimp fra diavalo pizza

Shrimp fra diavalo is a delicious Italian dish made with tasty fresh shrimp cooked in a hearty, spicy tomato sauce with garlic, white wine, and fresh parsley. This pizza version is made with shrimp, tomatoes, garlic, and red pepper flakes. It's a delicious and spicy option that makes the perfect piss for any seafood lovers.

Raspberry mascarpone pizza

Dessert pizza is one some people struggle with but at Lazy Susan we recent converts. This sweet and decadent pizza from Tablespoon is the perfect introduction. The raspberries add a tart sweetness, while the mascarpone cheese provides the divine creamy and rich flavour.

Rhubarb basil pizza with apple honey BBQ sauce

If you really want to go out of your comfort zone then this unique creation from Pad Cook will blow your mind. This crazy flavourful combination combines sweet and savoury flavours that are sure to surprise. The rhubarb is tart and tangy, the basil is fresh and herbaceous, and the apple honey BBQ sauce gives you a sweet and smoky finish.

Pesto and roasted vegetable pizza

If you’re looking for a healthy veggie topping that still packs a flavourful punch then this is the perfect pizza. The pesto adds a fresh herby flavour, while the roasted vegetables add sweetness and depth.

Kimchi pizza

We’re big kimchi fans here at Lazy Susan and we were inspired by some brilliant kimchi fries we had on a staff night out. We were inspired and we’ve since discovered that this fermented Korean cabbage also works great as pizza topping thanks to My Korean Kitchen. Their recipe adds all that spicy and tangy flavour to the pizza. Crispy and savoury with just a hint of those wonderful kimchi flavours, it’s a great intro for any newbies too.
